What actually degrades inside the carton
Oil oxidation
The single biggest determinant of real shelf life on a fried snack. Oxidation produces the stale, cardboard, crayon-like off-notes that consumers reject before any date code expires. It accelerates with heat, light and oxygen exposure, which means the packaging barrier and the container's thermal history matter more than the printed number.
Moisture pickup
A cracker at low water activity sits in a humid world and wants to equalise. Any pinhole, weak seal or crushed pack lets moisture in, and crispness is the first thing consumers notice. Sea freight is hard on packaging precisely because of the mechanical stress: seven weeks of vibration and stacking pressure will find weak seals that survived a domestic truck ride perfectly well.
Flavour and colour drift
Seasoning volatiles migrate and dissipate. Natural colours in a purple sweet potato variant behave differently from synthetic ones. Cheese-based seasoning made with real grated cheddar rather than flavour powder alone brings genuine dairy character but also dairy fat, which is subject to the same oxidation pathway as the frying oil.
Chocolate coatings
Worth flagging honestly. Any chocolate or compound coating is the most heat-sensitive component in a snack range. Temperature cycling in a container can cause fat bloom — a grey surface haze that is harmless but looks like a defect on shelf. If you are ordering a chocolate-coated variant into a hot-lane market, discuss stowage and arrival timing with your supplier rather than assuming it behaves like the plain product.
Conditions inside a dry container
An unrefrigerated container crossing the tropics is not a stable environment. Deck-stowed boxes in direct sun can run far above ambient during the day and cool sharply at night. That cycling drives two problems: accelerated oxidation at the high end, and condensation — container sweat — when warm humid air inside meets a cooled steel roof and drips back onto the top layer of cartons.
Practical mitigations that a competent shipper will already be using, and that you are entitled to ask about:
- Desiccant bags or container dry-liners on long humid lanes
- Cartons kept clear of the container walls and roof, with dunnage or slip sheets under the bottom layer
- Stable, interlocked stacking so cartons carry load through their corners rather than crushing the packs inside
- Avoiding a hot-yard wait: a container that sits three days in a sunlit port stack before loading has already spent shelf life
Reefer shipping solves the temperature problem but rarely pays for itself on a dry snack. The freight premium usually exceeds the value of the shelf life you recover. The better answer is to ship fresher stock and manage transit time.
Clauses worth agreeing before the first order
- Minimum remaining shelf life on arrival. Most retailers work to a percentage — commonly two-thirds or 75 per cent of total life remaining at the point of delivery to their DC. Specify the figure and the measurement point, not just "fresh stock".
- Maximum age at loading. Something like "produced no more than 21 days before container gate-in" is concrete and easy to verify against date codes.
- Date code format and legibility. Agree whether you need production date, best-before, or both, in what format, and whether the code must appear on the outer carton as well as the retail pack.
- Lot traceability. One batch code per production run, recorded against the shipment, so a quality query can be traced without recalling the whole container.
- Arrival inspection protocol. Who opens what, how many packs, and what the remedy is if crispness or seal integrity fails.
These belong in the contract because they are cheap to agree in advance and expensive to argue about after a container has cleared customs. There are two routes. Real-time studies hold sealed samples under defined conditions and assess them at intervals until the product falls out of specification — reliable but slow. Accelerated studies use elevated temperature and humidity to model degradation faster, then extrapolate. Larger multinationals typically hold full accelerated datasets with peroxide value and moisture curves. Many small and mid-sized Asian manufacturers work primarily from real-time data on their own production plus established practice for the product category.
Neither approach is wrong, but you should know which you are being given. Ask what the declared figure is based on, and whether any data exists for the specific pack format you are buying, since a 50 g single-serve and a 185 g family pack do not always behave identically. If the answer is vague, that is useful information about the supplier rather than the product.
For private-label projects, shelf life should be part of the development brief from the start. Changing a seasoning level, reducing sugar or altering a pack size can move the number, and it is better to establish that during sampling than after the first commercial run.
